Its origin story is rooted in a serendipitous discovery by a Cadbury employee named Ralph Thompson. While working at the factory, Thompson noticed that excess milk chocolate from moulds, used to create other chocolate bars, would spill over and cool into thin, flaky ripples. This accidental observation led to the creation of the Flake, which was initially designed as a cuboid-shaped chocolate bar that could fit into a wafer.
By 1923, the Flake was being sold nationwide in the UK, and by 1930, Cadbury began producing a smaller, half-length version specifically for ice cream cones, which became the iconic “99 Flake” served with soft serve vanilla ice cream. The name “99” is thought to have originated from Italian ice cream makers in the UK, possibly inspired by the elite Italian guard of 99 men during the monarchy, symbolizing something “first-class,” or from specific shop addresses like 99 Portobello High Street in Scotland or 99 Wellington Street in Manchester, though Cadbury notes the exact origin is “lost in the mists of time.”

The Flake’s manufacturing process remains a closely guarded secret, contributing to its distinctive texture that softens but doesn’t fully melt when heated, a trait that sets it apart from other chocolates.
