White pepper originates from the same plant as black pepper, Piper nigrum, a flowering vine native to South India, particularly the Malabar Coast of Kerala. Cultivated in tropical regions like India, Vietnam, Indonesia, and Malaysia, white pepper is produced from the ripe red or orange berries of the plant. Unlike black pepper, which is made by drying unripe green berries, white pepper is created by soaking the fully ripened berries in water to remove the outer pericarp (skin), leaving the inner seed. This process, often called retting, gives white pepper its smoother, cream-colored appearance and milder, earthier flavor with a sharp, fermented undertone. Historically, white pepper has been prized in Asian cuisines, particularly in China and Thailand, as well as in European dishes, where its subtle heat and lack of visible flecks suit delicate recipes.
